Paleo Bread

                                                                                                              

This gluten free, grain free and refined sugar free Paleo Bread has rich and nutty flavour and tastes a little bit like a soda bread. I use it a lot, my husband and I usually consume 3 bread loaves per week We eat it with soups and as an accompaniment with meals. I make sandwiches for breakfast with it too. My family and friends like it very much and always happy to take a loaf home with them. This Paleo Bread could be kept in the fridge for 6-7days or easily frozen and defrost when needed.

Allergies: Gluten free, Grain fee, Refined Sugar free

Preparation time: 10-15 min
Cooking time: 55-90 min, depend on a depth of your tin and number of eggs used
Serves: 10-12 people
Serve: with soups, meals and in sandwiches.


Ingredients:

3/4 cup 75 gr/3oz almond flour

3/4 cup 75 gr/3oz coconut flour

3/4 cup 75 gr/3oz golden flax flour

1/3 cup 30 gr/ 1.2oz water

1 tsp of baking soda (without wheat flour)
0.5 tsp of salt
100gr/3.5oz coconut oil, ghee or grass-fed butter

8-9 free range, organic eggs

You will need:

1 bread loaf tin 23x13cm (9x5inches)

1 table spoon

1 tea spoon

1 big bowl

1 medium bowl

1 small bowl

1 hand mixer

baking paper

Preparation method:

In a large bowl mix  coconut flour, golden flax flour, baking soda and salt

In a small bowl mix almond flour with water until it looks like a very thick cream

Add melted coconut oil, butter/ghee and mix well

Beat eggs with the hand mixer for around 3-4 min until a little foam of bubbles is formed

Add beaten eggs into the mixture and mix well

Pour the bread mixture into a greased bread tin

Cooking:

Bake in a preheated oven at 170C/350F for 55-90 min, until a toothpick inserted in the centre comes out clean

Remove from the oven and allow to cool

The bread is ready, enjoy!!!

Tips:

1 Cut bread in half at a thickest point to make sure that it is cooked through, crust should be around 2mm

2 To make this bread denser add only 7 eggs instead of 8-9

3 To make this bread lighter and airier add 10 eggs, instead of 8-9

4 You can also use a cake tin to make your bread look more special

5 If frozen, please allow at least 2 hours for bread to defrost
