Pork Escalope with Mushrooms, Cheese and Tomatoes


Pork escallops are a tasty, easy and very quick to cook main dish, suitable for lunches and dinners. Total cooking time is only 15 min.

Allergies: No nuts, No seeds, No eggs

Pork Escalope with Mushrooms, Cheese and Tomatoes

Preparation time: 5-6 min

Cooking time: 10-15 min

Serves: 2 people


4-5 medium size mushrooms

4 pork escallops

2 medium size tomatoes

50-80gr/ 2-3 oz hard cheese (cheddar, gruyere, parmesan)

1-2 tbsp ghee, coconut oil, or olive oil


pinch of salt

fresh herbs (coriander)

   You will need:

     sharp knife

     frying pan 24cm/9.5inches wide with a lid

    2 wooden spoons (spatulas)


    kitchen mallet

Preparation method:

Beat slightly pork escallops with a kitchen mallet until flat

Wash all the vegetables and mushrooms

Chop mushrooms

Cut tomatoes into rounds, 3-4 per tomato

Grate cheese on a medium size grater

Cooking method:

Put the ghee/oil on the pan and melt it

Add chopped mushrooms

Fry for 4-5 min, stir every 1 min

Temperature must be around 6 for the electric cooker (with the highest 9) and 4 for the gas cooker (with the highest 6)

Take mushrooms out of the pan

Put pork escallops into the pan

Fry for 1 min each side

Turnover pork escallops

Add cut tomatoes

Fry for 2-3 min until tomatoes are soft

Turnover pork escallops

Add fried mushrooms and grated cheese on top of the pork escallops

Fry for 1 min

Turnover and fry further 1-2min

The dish is ready to be placed on the plate.

Sprinkle with chopped coriander just before serving 

To be served with: Roasted Vegetables or Zucchini Pancakes, Russian Style Cabbage and Greens.
