Vegetable Tart

                                                                                                              

I like vegetable tarts and quiches. This vegetable tart recipe is really great and simple. It is an easy option for a lunch, as an accompaniment for meat and fish dishes or as an interesting starter for dinner parties. And as you know zucchini is one of my favourite vegetables to cook with. It could be prepared in advance and frozen. You can also use it with a lot of different spreads and fillings, like Carrot Salad, Tuna Filling, Chicken Filling, Liver Filling.

Allergies: Gluten free, Refined Sugar free

Preparation time: 10-15 min
Cooking time: 30-35 min
Serves: 6-8 people
Serve: with fish and meat dishes as an accomplishment, with different meat, fish, cheese, coconut milk, avocado and vegetables fillings.  

Ingredients:

Tart

1 cup 100gr/3.5oz almond flour

1 cup 100gr/3.5oz coconut flour or fine flakes

1 tsp of baking soda (without wheat flour)
0.5 tsp of salt

½ cup coconut milk
100gr/3.5oz ghee or grass-fed butter

1-2 medium zucchini

4 eggs

You will need:

1 Large Bowl
1 Sharp Knife
1 Grater
1 Chopping Board
1 hand mixer

Decoration

100gr/3.5oz mayonnaise

10 green and 10 Kalamata olives

Optional: 

50gr/1.8oz grated hard cheese

Preparation method:

In a large bowl mix almond flour, coconut flour, baking soda and salt

Add melted butter/ghee, coconut milk and mix well

Grate zucchini on a medium size grater and add into the mixture

Beat eggs with the hand mixer for around 3-4 min until a little foam of bubbles is formed

Add beaten eggs into the mixture and mix well

Pour an equal amount of mixture into 2 greased cake tins (around 8-10 tbsp in each)

Cooking:

Bake in preheated oven at 170C/350F for 30-35 min, until a toothpick inserted in the centre comes out clean

Remove from the oven and allow to cool

Decorating vegetable tart

Let tart cool down for 20-30 min

Pour on top of the tart 2-3tb spoons of mayonnaise or crème fraiche and spread equally

Sprinkle with chopped coriander and grated cheese

Arrange chopped olives in two circles: one is in the centre and the other is around the edge
